Ingredients
- 1 lb browned ground beef
- 1 yellow onion, diced
- 1 carton of crushed tomatoes or tomato sauce
- 4 cups beef stock or broth
- 2 bay leaves
- 1 cup instant mashed potatoes (or instant potato flakes)
- plus 3/4 cup instant dry milk
- salt and pepper to taste
Method
Step 1
brown ground beef in a skillet with onion, add cartoned tomatoes or tomato sauce, beef stock or broth, instant mashed potatoes and instant dry milk. Stir together until well combined before adding anything to the instant pot
Step 2
Place lid on instant pot inserts with a vent in sealing position.
Press the manual button for 20 minutes – adjust the time if needed depending on how long it takes your instant pot to get up to pressure (a total of 45 min cooking time is recommended).
Step 3
Open instant pot lid and stir together soup ingredients. Add salt and pepper to taste, remove bay leaves before serving.
