Prawn Cocktail Canapés, Crispy and soft
Prawn Cocktail Canapes are very simple to make and taste good. Even beginners who are new to cooking can try it. I can guarantee the taste, just try it!
Ingredients
- ½ small white cabbage
- 1 cucumber, cut into small neat cubes
- 40 large peeled prawns
For the cocktail sauce
- 500g good quality mayonnaise
- 2 tbsp tomato ketchup
- Worcestershire sauce, to taste
- Tabasco sauce, to taste
- 2 tbsp grated horseradish
- 1 tbsp Dijon mustard
- 2 tbsp Cognac (optional but good)
- Juice of ½ 1 lemon

Method
Step 1
First make the cocktail sauce, empty the mayonnaise into a bowl and add the remaining ingredients with salt to taste.
Stir well and add a little more of any of these flavouring ingredients should you feel it necessary.
Step 2
Set the cabbage half on a serving platter. Thread a piece of cucumber on a wooden satay stick so it resides at the blunt end.
Follow it with a prawn and a second piece of cucumber.
Step 3
Insert these sticks into the cabbage until there is room for no more. Fill a couple of pots with the cocktail sauce and serve alongside the prawns; alternatively, flood the serving platter with the sauce.
