Most Russians eat the seeds raw, cracking the hulls with their teeth, but they are even better toasted.
Ingredients
- 4 oz (120 g) sunflower seeds in the hull
- 1 oz (30 g) butter
- Salt to taste (optional)
For the cucumber sauce
- ½ large cucumber
- 100 g/4 oz fromage frais
For the lemon cream sauce
- Fish trimmings
- Juice of half a lemon
- 4 peppercorns
- 4 tbsp double cream

Method
Step 1
Melt the butter. Toss the seeds in it to coat them well
Step 2
Preheat the oven to 170°C/325°F/Gas 3. Turn the seeds out on to a baking tray, separating them.
Bake them for 15 to 20 minutes, or until just golden.
Step 3
Eat the seeds as they are out of your hand, or shell them and salt them, if desired.
