Octopus Stew With Onions , The simple octopus stew
An octopus stew that is simple and quick to make. Your health is a bonus.
Ingredients
- 2 kilos of octopus
- 1 ½ kilos of small onions
- 6 cloves of garlic, finely chopped
- 8-10 whole peppercorns
- 1 large tin of skinned tomatoes
- 2 cups of oil
- ½ cup of red wine
- ½ cup of vinegar
- Bay leaves, salt

Cooking time: 50-60 minutes.
Method
Step 1
Cut the octopus into pieces, wash them and put them into a saucepan without water.
Cook until its moisture has been absorbed, then add the vinegar. Also add the oil and stir with a wooden spoon.
Step 2
Then put in the onions and the finely chopped garlic, the wine and the mashed tomatoes and, finally, the peppercorns and the bay leaves.
Add salt and allow to boil on a moderate heat, frequently stirring to avoid sticking.
