Ingredients

1 lb/½ kilo fresh laver
1 lb/½ kilo oatmeal
Salt and pepper
4 oz/100 grm bacon fat

 

Method

Soak the laver in water for two hours to remove salt and sand. Simmer in hot water for several hours until tender. Break up the laver occasionally using a wooden spoon. Mix the puree with oatmeal, salt and pepper to taste. Shape into small cakes, half inch thick. Dust with oatmeal and fry in bacon fat.

Notes:- Laver bread and bacon is a popular breakfast dish; laver cakes can also be served with grilled meat.
