Jersey Wonders, Simple golden brown

No fund-raising Island event would be complete without its Jersey Wonder stall, with helpers, wearing the traditional sun bonnet, to cook them on the spot and to serve them.

The nearest English equivalent would be doughnuts but Jersey Wonders are never sugar coated, nor jam centred.

Traditionally, Jersey housewives cooked their Wonders as the tide went out. If they cooked them on an incoming tide, the fat in which the Wonders were cooked would invariably overflow the pan! They will keep for a month if put in an airtight tin.

Method

Step 1

Sieve flour and sugar and rub in butter, chopped small. Add whisked eggs to make a light dough. With floured hands make golf ball sized shapes.

Step 2

Place these on a lightly floured tray and cover with a damp cloth for 2 hours. Then roll out each ‘golf ball’ into oblongs 2 inches x 4 inches. With a sharp knife slit the centre of each oblong and twist top end through the slit.

Step 3

Drop 4-6 Wonders at a time into a large pan of hot oil, cook for 2 minutes on each side until golden brown. Drain on kitchen paper.
