Cucumber Carpaccio With Tomato Dressing with freshness and a variety of textures
Ingredients
- ¾ English cucumber
- 3 firm tomatoes
- 1 onion
- 1 tsp (5 ml) olive oil
- Salt and white pepper
- Ground cumin
- 1 tbsp (15 ml) tomato paste
- 2 tsp (10 ml) balsamic vinegar
- 2 sprigs lemon thyme

Method
Step 1
Lightly score the tomatoes crosswise, blanch, peel and dice coarsely. Set some aside.
Step 2
Chop the onion and lightly saute in hot olive oil on low heat until translucent.
Stir in the tomato, salt, pepper, cumin and tomato paste. Cook on low heat for 10 minutes, then purée.
Step 3
Finely slice the cucumber and arrange on two plates. Drizzle tomato sauce and balsamic vinegar over top. Garnish with remaining diced tomato and thyme leaves.
