Ingredients
1½ kg/3 lbs chicken
5ml/1 teaspoon soy sauce mixed with 15ml/ 1 tablespoon water
Stuffing:
225g/8oz pork sausage meat
60g/2oz/ ½ cup crushed bran flakes
30ml/2 tablespoons chopped mixed herbs
15ml/1 tablespoon chopped parsley
30g/1oz/2 tablespoons grated fresh coconut or dessicated coconut
1 egg
Salt
Freshly ground black pepper

Method
Put all the stuffing ingredients into a bowl and mix well. Carefully lift the skin of the chicken away from the breast and body. Stuff the sausage meat between the skin and the chicken and spread out as evenly as possible. Place the chicken on a rack in a dish and brush with the soy sauce and water mixture.
Cover with roasting film or a roasting bag which has been split open. Cook on HIGH for 10 minutes, then reduce setting and cook on MEDIUM for 24 minutes or until the chicken is cooked. Shield the breast of the chicken with a small piece of foil for the last 10 minutes of cooking.
