Ingredients
2 green bell peppers washed, seeded, and cut into 1″ cubes
1 cucumber peeled and cut into, 1″ cubes
3 tomatoes washed and cut into, 1″ cubes
2 stalks celery washed and diagonally sliced into ½” pieces
¼ lb feta cheese, cut into ½ ” cubes
½ red onion, diced
½ teaspoon kosher salt
Pepper, freshly ground
3 tablespoons vinegar
¼ cup oil
½ teaspoon oregano
1 tablespoon fresh basil, minced

Serves: 4
Method
In a 2-quart bowl, mix peppers, cucumber, tomatoes, celery, feta cheese and red onion. Season with salt, pepper, vinegar, oil, oregano and basil.
