Ingredients
- 15 g (½ oz) butter
- 2 tablespoons plain flour
- 150 ml (¼ pint) milk
- 1 teaspoon tomato purée
- Juice of ½ lemon
- Good pinch of cayenne pepper
- 250 g (8 oz) crabmeat, fresh, frozen or canned
- 2 large avocados, halved and stoned
- 4 teaspoons grated Parmesan cheese
- Salt and pepper to taste

Method
Step 1
Place the butter in a small bowl and microwave on HIGH for 30 seconds.
Stir in the flour and return to the microwave for 30 seconds.
Step 2
Pour the milk into a jug and heat on HIGH for 1 minute, then gradually blend into the butter and flour.
Cook on HIGH for 2 minutes, whisking every 30 seconds.
Step 3
Add the tomato puree, 1 teaspoon of the lemon juice, cayenne, salt and pepper to the sauce, then stir in the crabmeat.
Sprinkle the avocado flesh with remaining lemon juice.
Step 4
Pile the crabmeat filling into the avocado halves, then sprinkle with the Parmesan cheese.
Place in a shallow dish and cook on HIGH for 3 minutes. Serve hot, with brown bread and butter.
