Ingredients
1 packet of penne (pasta)
2 egg plants
1 large onion ground roughly
1 clove garlic
4 courgettes, sliced 1 cm thick
2 fresh, peeled and finely chopped tomatoes
1 tbsp sugar
Salt
Pepper
⅓ cup olive oil
½ tsp dried basil
½ tsp dried thyme
½ tsp dried oregano
Grated hard cheese (“kefalotyri”)

Serves: 6
Method
1. Preheat oven to 200°C.
2. Peel and cube the egg-plants. Toss them in a bowl with salted water (not much salt). Allow them to rest for one hour, then remove, rinse and pat them dry. Arrange the egg-plants in a baking pan along with all ingredients, but not the cheese.
3. Bake in the oven for 20-30 minutes, or until a little brown.
4. Boil the penne for 7-8 minutes, strain them in a colander and mix them in a bowl with the hot vegetables, cheese and freshly grated cheese. Serve immediately.
