Ingredients

1 kg of small potatoes
Salt

Sauce:

2 tbsp fresh basil leaves, finely chopped
1 tsp fresh mint leaves, finely chopped
2 anchovies, washed thoroughly
1 tbsp capers
4 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
½ tsp pepper

Method

1. Boil the potatoes in a lot of salted water. When done, strain the potatoes and keep them warm aside.

 

2. Put the olive oil, anchovies, basil, mint, pepper and lemon juice in the blender.

 

3. Process at medium speed for 1-2 minutes until you get a fine thick sauce. Add the capers and mix well.

 

4. Serve the potatoes on warm plates and pour the sauce over.
