This traditional Italian sauce should be used in moderation as it has a very strong flavour. Delicious stirred into fresh pasta, Pesto Sauce can also be used as an ingredient, added to other sauces and dishes. The texture of the finished pesto can be left quite coarse or pureed until smooth.
Ingredients
2 cloves of garlic, crushed
8 tbsp chopped fresh basil
2 tbsp chopped fresh parsley
50g/2oz pine nuts
75g/3oz fresh grated Parmesan cheese
150ml/1 ¼ pt extra virgin olive oil
Salt and freshly ground black pepper

Method
Place all the ingredients in a food processor or blender and blend until the pesto reaches the desired texture.
Stir Pesto Sauce into freshly cooked pasta tossed in butter and freshly ground black pepper. Serve immediately with extra freshly grated Parmesan cheese.
TIP:- For a more traditional method of preparation, place all the ingredients in a mortar and use the pestle to grind and pound until the pesto reaches the desired texture.
