Ingredients

8 small apples – cored
16 cloves
8 oz/225 gm breadcrumbs
1 oz/25 gm dried sage
4 oz/125 gm onion – grated
4 lb/1¾ kg pork fillet
1 lb/½ kg Caerphilly cheese – sliced or grated
4 oz/125 gm flour
1 egg- beaten

Method

Stud the apples with cloves Mix the breadcrumbs, sage and onion together and place in the centre of the apples. Cook in a moderate oven for 20 minutes 350°F/180°C/Gas mark 4. Cut the pork into 8 x ½ lb/225 gm pieces Slit with a knife and flatten out with a steak hammer. Place 2 oz/50 gm slice of cheese onto each and fold over. Pass through flour, beaten egg and breadcrumbs.

 

Fry on both sides in butter until cooked. Serve with the stuffed apples.

 

Notes:- The pork fillets can be prepared and frozen beforehand.
