Latvian Apple Pudding, So sweet
Latvian Apple Pudding is a Russian dessert. Rye flour is not just for bread, as proved by this delicious cake-like pudding. Variations of this dessert are found throughout the Baltic states.
Ingredients
- 4 medium apples, cored and diced
- 5 oz (150 g) plain flour
- 3 oz (85 g) rye flour
- 2 oz (60 g) unsalted butter
- 1 teaspoon baking soda
- 8 oz (225 g) sugar
- ½ teaspoon baking powder
- 1 egg, well beaten
- Pinch of salt
- 1 teaspoon vanilla essence
- 2 oz (60 g) chopped nuts

Method
Step 1
Lightly grease and flour a round 9 in (22.5 cm) baking dish. Preheat the oven to 180°C/350°F/Gas 4.
Melt the butter in a large skillet. Remove the pan from the heat and stir in the sugar until well blended. Then stir in the prepared apples. Set aside.
Step 2
In a medium bowl mix together the plain flour, rye flour, baking soda, powder, and salt.
Beat the egg until frothy and stir in the vanilla essence. Beat the egg into the apple mixture which should have cooled somewhat. Stir in the dry ingredients, mixing well. Finally, stir in the nuts.
Step 3
Turn the batter into the prepared baking dish. Bake the pudding at 180°C/350°F/Gas 4 for 35 to 40 minutes, until a tester comes out clean Serve with fresh sweet cream, if desired.
