Ingredients

4 thick slices of bread
2 tablespoons butter
4 slices ham
2 hard-boiled eggs, shelled and halved
1 egg yolk
300 ml/ 10 fl oz Béchamel sauce
60 g/ 2 oz Parmesan cheese, grated
Freshly ground black pepper

Method

Toast the bread and butter it. On each slice, place a slice of ham, and half a hard-boiled egg, face down. Preheat the grill to a medium heat. Stir the egg yolk into the Béchamel sauce and pour over the bread slices. Sprinkle with grated Parmesan cheese and pepper to taste. Brown under the grill. Serve immediately.
