Greek Pancakes With Assortment Of Herbs
Ingredients
250 gr white flour
60 gr corn flour
60 gr milk
2 egg yolks, whisked
2 cloves garlic, crushed
2 tbsp fresh/dried mint
2 tbsp fresh/dried oregano
1 tbsp fresh/dried marjoram
1 tbsp fresh/dried basil
1 tbsp fresh/dried thyme
Olive oil (for frying)
Salt
Pepper
4-5 tbsp yogurt
Method
1. In a bowl stir in the white flour, corn flour, milk and whisked egg yolks and cover bowl for half an hour.
2. Add the herbs, garlic, salt and pepper in the bowl and stir well.
3. Warm the olive oil in a deep frying pan and spoon in 2-3 tablespoons of the above mixture. A pancake starts forming. Fry until the pancakes are slightly brown on both sides. Remove each pancake using a perforated spoon and place them on large dish covered with kitchen paper to absorb remaining olive oil. Serve with yogurt.
