1 kilo lights
2 kilos of lambs' intestines
Fat of lamb
Salt, pepper, rigani


Wash the intestines well and turn inside out. Wash the offal and cut into pieces. Sprinkle liberally with salt and pepper and the rigani. Pass a roasting spit through the pieces of offal, alternating lights, liver and fat. Then tightly wrap all this with the intestines, tying with string to prevent it falling apart in the cooking process. Salt and pepper all the surface and allow to stand and drain for a couple of hours. Roast over charcoal, or in an oven, making sure that it rotates rapidly to start with, then slows down to get it more evenly cooked.
