Pear And Peach Apples

Ingredients

2 dried pear halves
2 dried peach halves
1 tablespoon sultanas
Good pinch of ground cloves
Pinch of mixed spice
60 g (2 oz/ ⅓ cup) light soft brown sugar
30 g (1 oz/6 teaspoons) butter
4 cooking apples
Whipped cream, to serve

Method

Put pear and peach halves in a saucepan. Add sufficient water to just cover fruits, then bring to boil and cook for 5 minutes. Drain thoroughly, then chop. Mix with sultanas, spices, sugar and butter.


Wash and core apples. Put on individual squares of double thickness foil. Stuff cavities with fruit filling, packing it in firmly. Draw up edges of foil and twist firmly to secure over apples.


Barbecue on rack over medium coals for 45 - 50 minutes. Using twisted foil as an aid, turn apples on their sides from time to time. Alternatively, cook directly in coals without turning for 20-30 minutes. To serve, snip off foil stalks and fold foil back to expose apples. Serve with whipped cream.
