Creamed Spinach Soup

After one taste of this delicious low-carb spinach soup, you will appreciate Popeye's love for this green vegetable. If you are trying to watch your fat intake, omit the cream and simply add an additional to cup of chicken broth so you will have enough soup to make four servings.


2 tablespoons butter
⅛ teaspoon freshly ground pepper
cup chopped yellow onion
1 pounds prewashed spinach
⅛ teaspoon ground nutmeg
3 cups chicken broth
cup whipping cream (optional)
teaspoon coarse salt


Serves: 4


Melt the butter in a large saucepan over medium-low heat. Add the onion and saute for 4 minutes, stirring occasionally. Add the spinach, chicken broth, salt, pepper, and nutmeg.

Cover, and cook for 30 minutes. Remove the saucepan from the heat and allow the soup to cool for 10 minutes.

Transfer the soup to the large work bowl of a food processor fitted with a metal blade (or in a blender) and process until pureed. (If you do not have a large work bowl, you may have to process the soup in two batches.) Return the soup to the saucepan to reheat. Taste for seasoning.

To serve, ladle the soup into four soup bowls and drizzle cream on top, if desired.
