Cauliflower with Mustard and Horseradish Mayonnaise

Ingredients

1 head cauliflower
5 tablespoons mayonnaise (preferably home-made)
5 tablespoons soured cream
2 tablespoons hot mustard
1 teaspoon fresh lemon juice
⅛ teaspoon salt
White pepper to taste
teaspoon prepared horseradish
1 tablespoons finely chopped parsley

Method

Steam the whole head of cauliflower over boiling water for 10 minutes. Drain and chill thoroughly in the refrigerator.


Just before serving, mix together the mayonnaise, soured cream, mustard, lemon juice, salt, pepper and horseradish, blending well. Spread this mixture over the top and sides of the chilled cauliflower, masking it completely. Sprinkle the chopped parsley over the top.


To serve, cut the cauliflower in wedges with a sharp knife.
