Cheese Enchiladas

Cheddar cheese, olives and mushrooms play the main role in this amazingly delicious, cheesy and vegetarian dish.


1 package corn tortillas
8 ounces shredded cheddar cheese, divided
1 can sliced mushrooms
1 can sliced olives
1 can tomato paste
1 can tomato sauce
1 onion, diced
2 tsp creole-style seasoning


Serves: 6


1. Preheat your oven to 350 degrees F.

2. Combine the tomato paste, sauce and Creole seasoning.

3. Warm the tortillas.

4. Dip each tortilla in tomato mixture.

5. Arrange them in the bottom of 9x13 inch baking dish.

6. Fill them with onions, mushrooms, olives and cheese.

7. Roll them up.

8. Repeat the process with remaining tortillas.

9. Sprinkle with the remaining cheese on top.

10. Bake for about half an hour, until bubbly.
