Russian Egg Salad
Salat iz yaits

This strongly-flavoured salad is a 'must' for the zakuska table. The egg slices are traditionally spread out in a long oval or rectangular cut-crystal dish, then masked with mayonnaise, rather than being mixed together with it.


6 hard-boiled eggs
teaspoon salt
pint (150 ml) mayonnaise (preferably home-made)
2 tablespoons finely chopped spring onion tops or chives
5 tablespoons soured cream
1 small clove garlic, crushed
teaspoon hot mustard
Carrot or pimiento


Serves: 4


Slice the eggs thinly. Mix together the mayonnaise, soured cream, garlic, mustard and salt. Mask the eggs with this mixture. Sprinkle the chopped spring onion on top. Garnish with a little carrot or pimiento for colour.
