Alfredo and Cheese Stuffed Potatoes

A delicious recipe for baked potatoes stuffed with cheese and Alfredo sauce that works as a great snack.


3 baking potatoes
1 cups alfredo sauce
cup plus
cup shredded cheddar cheese
cup grated parmesan cheese
cup shredded mozzarella cheese
1 garlic clove, minced
tsp dried thyme
tsp black pepper
1 tsp olive oil


Serves: 6


1. Preheat the oven to 450 degrees F.

2. Wash, scrub and dry the potatoes.

3. Bake them on a baking sheet for about 50 minutes.

4. Remove from oven and let cool.

5. Cut them in half and scoop out the pulp.

6. Reduce your oven’s temperature to 350 degrees.

7. In a skillet, heat the oil.

8. Sauté the garlic for 2 minutes.

9. In a bowl, combine the Alfredo sauce, thyme, garlic and pepper.

10. Stir in mozzarella, parmesan and ¾ cup of the cheddar cheese.

11. Stir in the potato pulp and mix to incorporate well.

12. Fill the potato shells with this mixture.

13. Sprinkle the stuffed potatoes with the remaining ¼ cup of cheddar cheese.

14. Bake for 15 minutes, until cheese is melted and serve.
