Hot and Sour Tofu Soup

Hot and sour is a usual theme that can be found in many traditional Chinese dishes.

Ingredients

4 cups of vegetable broth, homemade preferable
1 x 12 ounce pack of tofu and diced in small pieces
2 green onions, chopped finely
1 egg, large in size and beaten
1 mushroom, portobello style and sliced into halves
2 cups of cabbage, roughly chopped
1 tbsp. of Thai chilli sauce
1 tbsp. of rice vinegar
3 tbsp. of soy sauce
1 tsp. of citric acid, powder

Method

The first thing that you will want to do is bring your broth to a simmer over medium to high heat.


One your soup is simmering add in your chopped up tofu and finely diced green onions.


Next slowly drizzle in your beaten egg into your soup, making long strands of the egg in your soup as you do so.


Then add in your chopped up mushrooms and roughly chopped cabbage. Stir to evenly combine all of your ingredients together. Allow your soup to simmer for at least 5 minutes. After 5 minutes remove the soup from heat and season generously with your leftover ingredients. Continue stirring for at least 2 minutes and then remove from heat. Serve while still piping hot.
