Baby Lettuce, Strawberries and Rocamadour Cheese Salad


1 shallot, minced
2 tsp verjuice*
2 tsp walnut oil
Salt and freshly cracked black pepper
4 cups/170 g loosely packed fresh baby lettuces, washed and dried
12 fresh and very ripe strawberries, stemmed and sliced
2 radishes cut into paper-thin slices
4 discs ripe rocamadour cheese
1 baguette

* Verjuice / green juice - is a highly acidic juice made by pressing unripe grapes, crab-apples or other sour fruit.


Serves: 4


In a small bowl, whisk together the shallot, verjuice and walnut oil. Season with salt and pepper. Dress the greens in a large bowl. Arrange on four individual salad plates. Divide the strawberries and radishes among the salads. Top each salad with a whole disc of Rocamadour and serve with plenty of fresh baguette.
