Grilled Radicchio with Smoked Caciocavallo and Pancetta

Ingredients

1 head radicchio
4 thin slices smoked Caciocavallo or mozzarella cheese
4 thin slices pancetta
1 tbsp extra-virgin olive oil

Method

Cut the radicchio into four wedges. Place a slice of the cheese on each piece and then wrap a slice of pancetta around it as well. Heat a gas grill/barbecue to high heat or build a hot fire in a charcoal grill/barbecue. Drizzle the wrapped radicchio wedges with the olive oil and place them on the grill/ barbecue. Cook for 3 to 5 minutes, or until the pancetta is crisp on one side, and then turn with tongs to crisp the remaining edges. The cheese should melt nicely during this process, but if the pancetta is crisp and golden before the cheese has completely melted, simply place the radicchio wedges in a 400°F/200°C/gas 6 oven for a few more minutes. Serve hot or at room temperature.
