Fried Caciocavallo Cheese


cup/60 ml extra-virgin olive oil
3 garlic cloves, peeled
4 slices Caciocavallo cheese, in/2 cm thick
2 tbsp best quality red wine vinegar
2 tbsp fresh oregano or 1 tbsp dried
Freshly cracked black pepper
Crusty Italian bread or baguette, for serving


Serves: 4


Heat the olive oil in a large frying pan over low heat. Add the garlic, fry until golden brown on both sides, about 1 minute per side, and then discard. Turn up the heat to medium-high and add the slices of cheese. Fry the cheese for 2 or 3 minutes on each side, until the edges begin to gild. Splash the vinegar over the cheese in the pan and sprinkle in the oregano and pepper. Turn up the heat to high and cook for 1 minute more. Carefully place the cheese slices on hot plates and serve immediately with lots of crusty bread.
