Easter Holidays - Cognac Chocolate Babka

1 cup (225 g) butter
2 cups (450 g) sugar
4 tbsp cocoa powder
cup (125 ml) water
4 eggs (whites and yolks separated)
2 cups (220) flour
1 tsp baking powder
Almond extract
1 cup (80 g) raisins
3 tbsp cognac or rum


1.   Preheat the oven to 350°F (180°C).

2.   In a saucepan on medium heat, melt the butter and mix with sugar, cocoa powder and water until it boils. Set aside ½ cup to use as a glaze.

3.   Beat the egg whites until stiff peaks form.

4.   When the chocolate mass has cooled, stir in 4 egg yolks, flour mixed with baking powder, almond extract, raisins, cognac and finally the beaten egg whites.

5.   Bake in the oven for 45 minutes to 1 hour, and pour the glaze on top when the cake has cooled.
