Basic - Homemade Farmer Cheese


2 tbsp plain yogurt, cold
1 cup (250 ml) whole milk or skimmed milk


1.   Mix the cold yogurt and milk.

2.   Cook the liquid in a small saucepan on low heat for about 5 minutes, or until the milk starts to curdle. Make sure that it doesn’t boil.

3.   When you see some solids forming, take off the heat and pour the curdled milk over a very fine strainer, letting the water drain from the cheese (for a few minutes or hours, depending on how thick you want the cheese to be).

4.   Place in a bowl and serve.

Sandwich Idea - Spread the farmer cheese on a piece of fresh bread and top with sliced tomato and sprouts.
