Potato Soup
(Zupa Ziemnaczana)


1 qt (1 l) of broth
2 onions
2 leeks
5 garlic cloves
3 tbsp olive oil
4 potatoes
Herbs: bay leaves, thyme, chives
Salt and pepper


1.   Make broth from soup vegetables and chicken, or just soup vegetables. You can also make broth with a bouillon cube.

2.   Finely chop the onions, slice the leeks into quarter-inch (6 mm) rings, and fry in the olive oil, adding diced garlic cloves.

3.   Clean, peel, and chop the potatoes into cubes.

4.   When the onions and leeks are medium-brown, add in the potatoes, herbs, salt, and pepper. Stir for a few moments, then cover with the broth and simmer in a covered pan on low heat for about 30 minutes, until the potatoes are soft.

5.   When the soup cools, blend in a blender until you get a smooth texture. Salt and pepper to taste.
