Serve this twist on a classic cocktail with a few amaretti biscuits, the almond and peach flavours complement each other perfectly.

2 large ripe peaches
300 ml/10 fl oz chilled sparkling grape juice

To serve

Amaretti biscuits


Pour boiling water over the peaches to scald them. Drain, then peel and chop them, discarding the stones.

Put the chopped peaches into a food processor and process until very smooth.

Divide the peach mixture between 2 champagne flutes. Stir in the sparkling grape juice, mixing with a swizzle stick.

Serve at once with a few amaretti biscuits to nibble on.
