Spicy Tofu

Although tofu tends to be bland in taste, when marinated in a spicy marinade, it readily absorbs the flavors.

1 package (16 ounces) extra firm tofu
1 tablespoon Asian sesame oil
1 tablespoon soy sauce
1 teaspoon red wine vinegar
1 clove garlic, minced
teaspoon ground coriander
teaspoon ground turmeric
teaspoon dried basil
teaspoon dried marjoram leaves
teaspoon dried red pepper flakes
teaspoon coarse salt
teaspoon freshly ground pepper


Serves: 4


Place the tofu on a double thickness of paper towels and blot dry.

Cut the tofu in half horizontally and then cut each piece in half (there should be 4 equal-size pieces). Set aside.

To make the Spicy Tofu Marinade, combine the rest of the ingredi­ents in a nonreactive dish and blend well. Add the tofu and turn to coat all over. Cover, and refrigerate for several hours or overnight, turning the tofu at least once.

Preheat the oven to 375 degrees F. Lightly coat a rimmed baking sheet with a nonstick vegetable spray.

Remove the tofu from the marinade (discard the marinade). Place the tofu on the prepared baking sheet and bake for 20 to 25 minutes. Serve immediately.
