Maytag Blue Cheese Stuffed Pork Chops

Stuffing a pork chop with a delectable Maytag Blue Cheese filling is the closest thing to being in "hog heaven." If you double the amount of mushroom and green onions called for in the recipe, you can set aside half of the cooked mixture to spoon over the finished pork chop.

2 tablespoons extra virgin olive oil
cup thinly sliced fresh button mushrooms
cup finely minced yellow onion
6 ounces Maytag Blue Cheese or favorite blue cheese, crumbled
teaspoon coarse salt
⅛ teaspoon freshly ground pepper
6 thick-cut (1 to 1 inches) pork loin chops


Serves: 6


Preheat oven to 325 degrees F. Heat a medium skillet over medium heat for 2 minutes. Add the olive oil and swirl the pan to coat the bottom evenly. Add the mushrooms and onion and sauté for 4 minutes, stirring frequently. Remove the skillet from the heat and add the cheese, salt, and pepper and blend well. Set aside.

Cut a deep pocket in each pork chop by making a small incision at the small end of the chop and carefully rotating the blade inside the chop, keeping the opening no wider than 1 inch. Stuff the blue cheese mixture in the pork chop, dividing evenly. Place the pork chops in a shallow pan and bake for 45 minutes.

To serve, place a pork chop on each of six dinner plates and top with a dollop of the Maytag Blue Cheese filling, if desired.
