Mediterranean Turkey Patties

Combining ground turkey with a mélange of Mediterranean spices results in a highly flavorful taste sensation.

Ingredients

2¼ pounds ground turkey
½ cup finely minced yellow onion
3 tablespoons minced fresh cilantro leaves
1 large clove garlic, minced
4 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon coarse salt
1 teaspoon freshly ground pepper
½ teaspoon cayenne pepper
¼ teaspoon ground allspice
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
2 tablespoons extra virgin olive oil

Method

Using clean hands, combine all the ingredients except the olive oil in a large bowl until well blended. (The turkey mixture can be re­frigerated in a covered container for several hours or overnight.) Form the turkey mixture into 6 patties.


Heat a large skillet over medium-high heat for 1 minute. Add the olive oil and swirl the pan to coat the bottom evenly. Add the turkey patties and saute for 4 to 5 minutes on each side or until cooked through.


To serve, place a turkey patty on each of six dinner plates and top with a dollop of Greek Yogurt and Cucumber Dip (Tsatziki), if desired.

VARIATION:

To grill the turkey patties, place them on a grill coated with a nonstick vegetable spray over medium-hot coals. Cover the grill and cook for 4 to 5 minutes on each side.
