Pacific Rim Pork Tenderloin

If you like spicy foods infused with Asian ingredients, then this is the dish for you. The pork gets its heat from the chili paste, which is a combination of chilis, salt, and oil.

1 tablespoon soy sauce
1 tablespoon cold water
1 tablespoon rice vinegar
1 tablespoon minced fresh ginger
1 teaspoon Asian sesame oil
1 teaspoon chili paste
1 teaspoon hoisin sauce
1 clove garlic, minced
1 pork tenderloin (1 pounds)


Serves: 4


To make the Pacific Rim Marinade, combine all ingredients except for the pork in a large resealable plastic bag and blend well. Add the pork tenderloin and turn to coat all over. Seal the bag, and refrigerate for several hours or overnight, turning the pork at least once.

Preheat oven to 325 degrees F. Lightly coat a shallow pan with a nonstick vegetable spray.

Remove the pork tenderloin from the marinade (reserve the mari­nade). Place the pork in the prepared pan. Bake for 45 to 55 minutes or until a meat thermometer registers 150 to 155 degrees F, basting the pork with the reserved marinade occasionally. Transfer the pork to a carving board and cover loosely with foil. Cool at least 10 minutes before carving it into thin slices.

To serve, place overlapping slices of pork on each of four dinner plates, dividing evenly among the servings. 


Substitute 1 pounds extra firm tofu for the pork.

Place the tofu on a double thickness of paper towels and blot dry. Cut the tofu into four slices, each about - to 1-inch thick. Place the tofu in a nonreactive dish and pour the marinade over the pieces. Turn to coat all over. Cover, and refrigerate for several hours.

Remove the tofu from the marinade (discard the marinade). Insert two wooden skewers (which have soaked in water for at least 30 minutes) parallel to each other into each piece of tofu. Cook the tofu on the grill for 5 to 8 minutes on each side or until golden brown. Or, place the tofu on a rimmed baking sheet that has been lightly coated with a non-stick vegetable spray. Preheat the oven to 375 degrees F and bake for 20 to 25 minutes.
