Lasagna Rolls

1 tablespoon vegetable oil
8 ounces Italian sausage, casings removed
cup chopped onion
1 egg yolk, beaten
4 ounces cottage cheese
2 tablespoons grated Parmesan cheese
4 lasagna noodles, cooked
1 cup pizza sauce
1 tablespoon water
cup (1 ounce) shredded mozzarella cheese


Makes: 4


Heat the oil in a large skillet. Cook the sausage and onion in the hot oil until the sausage is brown and crumbly and the onion is tender, stirring occasionally. Remove from the heat and stir in the egg yolk, cottage cheese and Parmesan cheese.

Spread each lasagna noodle with equal amounts of the sausage mixture. Roll as for a jelly roll, starting at a short end. Arrange the lasagna rolls seam side down in a greased baking dish. Combine the pizza sauce and water in a bowl. Pour the sauce mixture over the lasagna rolls.

Bake at 350 degrees for 20 minutes or until heated through. Sprinkle with the mozzarella cheese. Bake for 10 minutes longer or until the cheese is melted. You may cook these in the microwave if desired. Microwave on High for 2 to 3 minutes or until heated through. Sprinkle with the mozzarella cheese and microwave on High for 30 seconds or until the cheese is melted.
