Lentil Pasta Burgers

Served with pitta bread and a little salad, these make a treat for children.

Ingredients

75g/3oz dried pastina (any tiny shapes)
Dash of olive oil
200g/7oz can brown lentils, drained
25g/1oz dried wholemeal breadcrumbs
25g/1oz finely grated fresh Parmesan cheese
1 small onion, chopped
1tbsp chopped fresh parsley
60ml/4tbsp crunchy peanut butter
15ml/1tbsp tomato purée
1tsp yeast extract
60ml/4tbsp hot water
Sunflower oil, for shallow frying

Method

Bring a large saucepan of water to the boil and add the pastina with a dash of olive oil. Cook for about 8 minutes, stirring occa­sionally, until tender. Drain and allow to cool slightly.


Combine the pasta in a large mixing bowl with the lentils, breadcrumbs, Parmesan cheese, onion and parsley.


Place the peanut butter, tomato purée and yeast extract in a separate bowl and stir together with the hot water. Add this to the lentil mixture and mix well.


Using damp hands, divide the mixture into four equal portions and form into burger shapes. Heat the oil for shallow frying and fry the burgers for about 5 minutes on each side. Serve hot or cold.

TIP:
The Lentil Pasta Burgers can also be grilled, if you prefer. Place on a lightly oiled baking sheet and put under a preheated grill for about 3-5 minutes on each side.
