Scotch Woodcock

2 eggs
1 oz. (2 tablespoons) butter
1 tablespoon milk
teaspoon salt
Pinch of pepper
2 slices freshly buttered toast
4 anchovies
2 teaspoons capers


Serves: 2


Combine the eggs, butter, milk, salt and pepper in a heat resistant jug. Cook uncovered on HIGH for 1½ -2½ minutes, stirring every 30 seconds. Cut the toast into triangles. Pile the egg mixture on the toast and top with anchovies and capers. Arrange on a paper plate and reheat on HIGH for 30 seconds.
