Lemon Soda

You certainly get the very best and freshest lemony flavour by squeezing your own fresh lemon juice. This can be bottled and kept in the refrigerator for a few days.

8 large lemons
200 g/7 oz caster sugar, plus extra to taste
200 ml/7 fl oz boiling water
Soda water


Serves: 6


Finely grate the peel and squeeze the juice of 7 lemons into a large heatproof bowl.

Thinly slice the remaining lemon and reserve for serving.

Stir the caster sugar and boiling water into the lemon juice and chill until required.

To serve, strain into a serving jug with ice and dilute with soda water to taste.

Add extra sugar, if desired.

Serve in chilled glasses, dressed with lemon slices.
