Vegetable Cocktail

This savoury juice combines all the goodness of fresh vegetables in one glass.

125 ml/4 fl oz carrot juice
500 g/1 ib 2 oz tomatoes, skinned, deseeded and roughly chopped
1 tbsp lemon juice
4 celery sticks, trimmed and sliced
4 spring onions, trimmed and roughly chopped
25 g/1 oz fresh parsley
25 g/1 oz fresh mint


2 celery sticks


Serves: 2


Put the carrot juice, tomatoes and lemon juice into a food processor and process gently until combined.

Add the sliced celery along with the spring onions, parsley and mint and process until smooth.

Pour the mixture into glasses and garnish with celery sticks.

Serve at once.
