Squash A La Grecque

This salad makes a wonderful side dish to almost any barbecued meal. Cook the baby squashes until they are perfectly tender, so they can fully absorb the delicious flavours of the dressing.

Ingredients

175g/6oz patty-pan squashes
250ml/8fl oz/1 cup white wine
Juice of 2 lemons
Sprig of fresh thyme
1 bay leaf
Handful of fresh chervil, roughly chopped
1.5ml/ tsp coriander seeds, crushed
75ml/5 tbsp olive oil
Salt and freshly ground black pepper

Method

1. Blanch the patty-pan squashes in boiling water for 3 minutes, drain, then refresh under cold running water.


2. Place the remaining ingredients in a pan, add 150ml/¼ pint/⅔ cup of water and let simmer. Add the squashes and cook for 10 minutes, then remove.


3. Reduce the liquid by boiling hard for 10 minutes. Strain it and pour it over the squashes. Leave until cool for the flavours to be absorbed. Serve cold.
