Yekik Alicha
[Ethiopia]

Ingredients

2 cups split peas (red or green)
4 cups water
2 cups oil
2 cups red onions, chopped
1 tablespoon garlic, chopped
1 tablespoon ginger, chopped
1 teaspoon black pepper
Salt, to taste
4 fresh green Anaheim or Jalapeno peppers, Sliced


Method

Wash the split peas. Boil in the water until soft. Drain. Heat the oil in a medium pan. Add the onions and fry until soft. Add the peas and stir to prevent sticking. Add the garlic, ginger, black pepper and salt. Simmer for 20 to 30 minutes, stirring occasionally. Add the green peppers and stir.


Serve hot or cold.
