Fettuccine with Garlicky Creamed Spinach

This tasty recipe is quick and easy to prepare. Serve immediately with plenty of freshly grated Parmesan cheese.

450g/1lb dried fettuccine
Dash of olive oil
25g/1oz butter
3 cloves of garlic, crushed
450g/1lb frozen chopped spinach, thawed and well drained
275ml/˝pt single cream
Pinch of freshly grated nutmeg
Salt and freshly ground black pepper
50g/2oz freshly grated Parmesan cheese, plus extra to serve


Serves: 4


Bring a large saucepan of water to the boil and add the fettuccine with a dash of olive oil. Cook for about 8 minutes, stirring occa­sionally, until tender. Drain and set aside, covered, to keep warm.

Melt the butter in a large frying pan and sauté the garlic for 1-2 minutes, then add the spinach. Cook over medium heat for about 5 minutes, stirring frequently, until the moisture has evaporated.

Add the cream and nutmeg and season with salt and freshly ground black pepper. Toss in the fettuccine and Parmesan cheese, stir and cook for a final minute. Serve with extra freshly grated Parmesan cheese.
