Spicy Tomato Coriander Prawns
1kg uncooked medium prawns
2 teaspoons ground hot paprika
1 teaspoon coriander seeds, crushed
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon cracked black pepper
¼ teaspoon ground cloves
¼ teaspoon ground cardamom
¼ cup (60ml) water
1 tablespoon light olive oil
2 medium (300g) onions, sliced
2 large (500g) tomatoes, chopped
2 tablespoons finely shredded fresh coriander leaves
1. Shell and devein prawns, leaving tails intact. Combine spices and water in small bowl; mix well.
2. Heat oil in pan, add onions, cook, stirring, 2 minutes. Add spice mixture, cook, stirring, until fragrant.
3. Add prawns and tomatoes, cook, stirring, until prawns are just tender. Remove from heat; stir in fresh coriander.
