Perfect Parkin

Ingredients

50 g (2 oz) butter
50 g (2 oz) white vegetable fat
100 g (4 oz) soft light brown sugar
150 g (6 oz) golden syrup
50 g (2 oz) black treacle
3 eggs, beaten
142 ml ( pint) milk
100 g (4 oz) medium oatmeal
100 g (4 oz) self-raising flour
225 g (8 oz) plain flour, sifted
2 teaspoons ground ginger
teaspoon salt
1 teaspoon bicarbonate of soda
1 tablespoon golden syrup, warmed

Method

1 Grease and line a 20 cm (8 inch) square cake tin.

2 Put the butter, vegetable fat, sugar, syrup and treacle in a large saucepan and melt over a low heat, stirring continuously.

3 Remove from the heat, then stir the beaten eggs and half the milk into the melted mixture.

4 Put the oatmeal, self-raising and plain flours, ginger and salt into a large bowl and make a well in the centre. Add the melted mixture and stir until well mixed.

5 Mix the bicarbonate of soda with the remaining milk, and then stir into the parkin mixture. Beat together well.

6 Pour the mixture into the prepared tin. Place in a preheated oven, 190˚C (375˚F), Gas Mark 5, for about 35 minutes, until risen and firm to the touch.

7 Brush the surface with warmed golden syrup. Leave to cool in the tin, and then cut into 16 squares. Keep the parkin in an airtight tin for 2 days before eating.
