Boxing Ring

Ingredients

75 g (3 oz) butter, softened
150 g (6 oz) icing sugar, sifted
2 teaspoons (10 ml) hot water
15 cm (6 inch) square sponge cake
2 tablespoons apricot jam
675 g (1 lb) ready-to-roll fondant icing
Brown, pink, blue, red, black, green food colouring

YOU WILL ALSO NEED

10 inch (25 cm) square silver cake board
1 bamboo skewer
125 cm (50 inches) narrow ribbon


Method

1 To make the buttercream: cream together the butter, icing sugar and water until smooth. Slice the cake in half horizontally and sandwich together with buttercream and apricot jam.

2 Dampen the cake board. Roll out 100 g (4 oz) of the fondant and cover the board. Trim the edges. Using the side of a ruler, mark lines in the fondant 1 cm ( inch) apart. Mark the planks, woodgrain and nails with a cocktail stick.

3 Roll out 325 g (12 oz) of the fondant and cover the cake. Put the cake on the board. Mark the planks around the ring with a ruler and cocktail stick. Cut the bamboo skewer into 4, push 1 piece into each corner of the ring and secure with fondant. Cut the ribbon in half and tie around the corner posts. Thin the brown food colouring with a little water and brush over the planks. Leave to dry.

4 Colour 100 g (4 oz) of the fondant pink and make 2 figures and the refs head and hands. Use 20 g ( oz) of fondant to make the refs shirt. Colour 15 g ( oz) of fondant blue and 15 g ( oz) red and use to make the shorts and the refs shoes. Colour 25 g (1 oz) of the fondant black and shape the hoots, gloves and refs trousers. Fix to the figures with water.

5 Colour 25 g (1 oz) of the fondant green and roll out to make 2 towels. Fix one on the cake board and the other on a corner post. Roll out 25 g (1 oz) of fondant into a 20 x 4 cm (8 x 1 inch) strip and cut into 8 rectangles for the posters. Fix the figures in the boxing ring with water.

6 Using black food colouring, paint on the hair and faces. Paint the details on the posters with red food colouring. Leave to dry.
