Simply Grilled Lobster

Two 1 kg (2lb) freshly cooked lobsters 125 g (4 oz/ cup) butter, softened
2 teaspoons lemon juice
Salt and pepper
Lemon wedges and parsley sprigs, to garnish

On a chopping board and using a heavy sharp knife, split lobsters in half by cutting Iengthwise along line down the back and through the tail. Crack claws. Remove gills, grayish sac near head and black vein which runs lengthwise along tail.

Remove the coral and beat into half quantity of butter and set aside; melt remaining butter. Sprinkle lobster flesh with lemon juice and season lightly with salt and pepper. Brush generously with melted butter.

Barbecue lobster, flesh side uppermost, on an oiled rack over medium coals for about 5-10 minutes. Turn over and cook for 3-4 minutes until lobster meat is hot and browning slightly. Serve topped with coral butter. Garnish with lemon wedges and parsley sprigs.
