Potato Salad

900g/2 lbs small red potatoes, unpeeled
Soured cream
2.5 ml/ teaspoon salt
1.5 ml/ teaspoon black pepper
2.5 ml/ teaspoon dry mustard
30 ml/2 tablespoons chopped fresh parsley
30 ml/2 tablespoons chopped fresh dill
1 stalk celery, diced
4 spring onions, chopped
3 hard-boiled eggs, diced


Serves: 6


Drop the potatoes into boiling water and cook until fork tender, 20-30 minutes, depending on their size. Drain well and let sit until cool enough to handle.

While the potatoes are cooking, make a dressing by whisking together the mayonnaise, soured cream, salt, pepper, mustard, parsley and dill.

Cube the potatoes and mix with the celery, onions and eggs. Gently stir in the dressing. Taste and adjust seasonings.
