Spinach Omelette

300g (11oz) spinach
1 shallot
25g (1oz) butter
Salt, pepper
4 eggs


Preparation time: 15 minutes
Cooking time: 10 minutes
Serves: 2


1. Rinse spinach several times in cold water and cut off the roughest stalks. Sauté finely chopped shallot and spinach in 15g (½oz) butter for 5-6 minutes. Season with salt, pepper and grated nutmeg.

2. Beat eggs lightly with salt and pepper and fry omelette until nearly done in remaining butter.

3. Place spinach mixture on egg mixture and finish cooking omelette.
